Seasonal Strawberry & Buffalo Mozzarella Salad by @tarasbusykitchen

There is nothing better than enjoying Summer evenings with a quick and easy seasonal salad - and cheeky glass of vino maybe? We have teamed up with one of our fabulous foodie Salt-Water ambassadors, Tara Smith to share her go-to summer salad recipe. The combination of juicy berries and creamy mozzarella makes this dish a crowd pleaser no matter the occasion!
Serves 2 as main or 4 as side (can easily be doubled/tripled to feed more)
Ingredients:
120g wild rocket
1 ball buffalo mozzarella
300g strawberries, sliced
1 handful of pistachios
Sea salt & black pepper
1 - 2tbsp extra virgin olive oil
1/2 lemon
Fresh herbs such as basil, mint or parsley, roughly torn
Balsamic glaze optional
Method:
On a pretty platter simply scatter the rocket leaves. Place the sliced strawberries evenly over the rocket then tear the mozzarella into small pieces and drape here and there over the strawberries.
Next add the fresh herbs to the platter. Any combination or one will be delicious.
Toast the pistachios in a dry pan over a high heat for a minute or so to release the flavour, be careful not to burn them , then chop roughly and scatter over the top.
Season with salt and pepper to taste. Drizzle the olive oil and squeeze the lemon juice over the salad and toss together. Add a drizzle of balsamic vinegar and more herbs to finish the dish if desired.
Serve with some crusty bread, as a side dish for grilled meat or fish or just on its own in the sunshine.
